Muesli bread

Flour
200 g strong white bread flour and 200 g spelt flour
Muesli
125 g muesli (can be flakes with the addition of dried fruits, seeds etc)
Salt
1 tsp
Yeast
7 g fast action yeast
Juice
1 tbsp lemon juice
Water
250 ml warm water

Shake muesli, add flour, yeast and salt to them. Make a well in the middle and add oil, honey, water and lemon juice. You can use a mixer to mix the dough or mix it manually to create smooth and elastic dough state.

Take a clean bowl, place the dough in it, cover with a film and leave it for 1 – 1.5 hours in a warm place until it doubles in size.

Form an oval from the dough, grease it with water and sprinkle with more muesli or flakes, just remove the fruit beforehand as it may burn. Put the dough in an oiled form and set aside for 30 minutes, covering with a towel beforehand.

Preheat the oven to 220 degrees. Place a large baking tray at the bottom of the oven and add 250 ml of water to it to create steam.

Bake the bread for the first 15 minutes at 220 degrees and another 30 minutes at 190. After baking, let the bread cool slightly and then remove it from the mold.
